Biscuits and Gravy ...Happy Breakfast to all!


I should also now mention that I also love to use as many short cuts as possible and still be healthy and vegan!  So all vegans the first thing you should know is your DON'T have to make your own biscuits, Pillsbury has a variety of low fat canned biscuits that are awesome, so choose their low fat cresent rolls and you can skip the entire biscuit making.   Just pop 'em in the oven and done and done.  If you like the most traditional look at biscuits you can also you bisquick  which is also vegan and offers a heart healthy version.    

If you decide to go the bisquick route, just replace the milk requirement with almond, soy, or coconut based milk.  I always go almond but if you have a nut allergy the others will work fine too!  Ok now you have your biscuits in the over ( also you should know that I am terrible at baking because I hate to measure things so I will always recommend using box or premade mixes if they aren't gross for you.

So you have the biscuits finished now gravy time.  Everyone thinks this is the hard part, but nope...sooo easy.  Start with vegan sausage, the best on the market is made by gimme lean. 
But in order to get this in the small peices that we all know and love you need to take it out of the package and slice it into quarter inch slices and pop in the microwave for about 1 minute.  This is to remove some of the moisture and allow it to break up easier.  While nuking the sausage get out a large sauce pan and melt 1 table spoon of vegan butter (I always use earth balance because it has the best taste and is the healthiest but you can use what ever you like.)  *** As a note, blue bonnet light is also vegan, and is super cheap!  or

Now your butter is melting, take your sausage patties and cut them up into very small pieces and plop it into the hot melted butter.  You need to have a wooden spoon on hand to prevent the sausage from sticking.  Let the faux meat start to brown on all sides and continue to cut it up with your spoon as you stir.  As it starts to brown add LOTS of black pepper and some salt.  The salt and pepper is to taste but will make it taste more like your grandma's cooking.  Once the meat is browned shake 2 or 3 table spoons of flour over the top and stir in.  You want the flour to cook into the butter and meat.  Once it looks like a brownish paste, time to add your milk.  Again I use Almond milk, but coconut based milk will work too.  You could use soy but it doesn't have the greatest texture. You want to add in 2 cups of milk to start and bring it back to to a bubble.  It will not be at it's thickest until it boils.  Once is bubbles you can add milk to thin it out to the consistency that you like.  This is also when you will add a few shakes of granulated garlic and a few shakes of sage.  Add more salt and pepper to taste.  If you like it spicy go for the CRP (crushed red pepper).  

Ok now you have done it...gravy thick and yummy and finished.  Tear up a couple of biscuits in the bottle of a bowl and serve it over top!  
Yum yum yum!  I have made and served this to many of meat eater and they had NO idea that it was healthy or vegan.  Enjoy and let me know how it works for you!
