World's Easiest Vegan Brownies for Hannah




Ok Hannah, this is going to be the easiest and most delicious thing you have ever made.  And lower fat than any cake you have ever made.

Most people don't realize that there are SO many boxed standard cake mixes that are already vegan.  My two favorite for brownies are Duncan Hines German Chocolate Moist and Duncan Hines Red Velvet.  Yup those are both VEGAN.  So all the hard work is finished. Now no more measuring.

Now Preheat you oven according to the instructions on the box.  Take your cake mix place in a bowl.  Instead of oil add 1/2 cup of apple sauce, you can use the oil if you want, but the apple sauce is lower cal and adds a great taste.  Now your only other ingredient is 1 can of your favorite soda.  In brownies I love using a vanilla/ cherry soda, but cherry 7UP or even red pop works great.  Just something that will give it a little fruity undertone.

Yup thats it.  Cake mix, a can of soda, and some apple sauce. (I sometimes sprinkle in a couple table spoons of egg replacer but it is not nessecary so if you don't have it at your house, no worries.) Mix it together by hand for about 2 minutes or until it is evenly mixed.  Now place it in a baking dish that is not the size they recommend.  The idea is that you want it to be thicker than they think it should be.  So if it says 9 x 13, I recommend a 8 x 8 or 9 x 9 dish, but make sure your batter doesn't doesn't come all the way to the top because it will double is height while cooking.

Now bake it.  The baking time is going to be determined by how big your baking dish is.  I have even made these in deep pie dishes, so you will have to adjust accordingly.  The important part is, you DON'T want to cook it until it is finished. It should still be quite soft in the middle when you pull it out to ensure your brownies will be gooey and dense.  When you take it out of the oven the sides should look firm and the middle should no longer look completely runny.  This should take about 30 minutes for the 9 by 9 dish.  Your brownies will be puffed up like a huge cake or soufle. But when they cool they will collapse, that is what you are looking for.  As they cool and collapse they will get thick like those yummy brownies your grandma made with about 23948230948230 calories and 4 sticks of butter. Let them cool for about 30 minutes and scoop and enjoy.  I say scoop because they are hard to take out in perfect squares, but trust me they are AWESOME and will full any brownie lover in the world.  I suggest serving them under some great coconut based vanilla ice cream with some fresh strawberries on top!
